Pita Bread

Serves: 4 to 6

What is better than a warm homemade pita? If you make this recipe you will never buy a store bought pita again!
   1 packet of yeast
   1 tablespoons sugar
   1/2 cup warm water
   3 cups of regular flour or 1 cup of wheat & 2 cups of regular flour
   1 1/2 tsp Salt
   2 Tablespoons of Olive Oil


Put the salt in the flour. Put yeast in a small bowl with the sugar them add 1/2 cup of warm water and stir together. Let sit for 10 to 15 minutes or until foamy. Take a wooden spoon and make a well in the middle of the flour them add the yeast mixture slowly stirring to combine with flour. Then slowly while still stirring add 1 cup of warm water and mix until it all sticks together and there is no dry flour in the bowl. (If you have a mixer with a dough hook use as usual) Put the olive oil in the bottom of a larger bowl them add the dough and flip to cover with oil. Cover with plastic wrop & a towel. Let rise untill double approx 1 hour. Flour a bread board and knead dough for about 10 minutes until it is no longer sticky. Pinch into small balls and put on floured plate to rest for 10 minutes. Preheat Oven & the pan you are going to bake on to 500 & put rack to closest level from the heat. Take a ball & press flat then use a roller to roll to about 5 or 6 inches in diamater & very thin approx 1/8 inch thick. Bake for 4 minutes on the first side then flip & bake for 2 more minutes. Remove from the oven & poke with a fork to let steam escape. Eat warm or let get to room temperature them store in a plastic bag for later use. Enjoy!
